Winemaking:
Picked by hand, with grape selection upon arrival at the winery
Cold maceration (around 50º F) before fermentation
Temperature-controlled during fermentation and maceration (between
80-85º F)
Maceration between: 17 and 24 days on the cap
Malolactic fermentation: 100% new oak at 70°F
Aging: 100 % in new French oak barrels
Length of aging: 15 months
At bottling: Al = 16.45%, Residual Sugar = 1.3 g/L, Total Acidity in H2So4 = 6.7 g/L, in Tartaric = 4.3 g/L
No fining, no filtering
Blend: 45% Cabernet Sauvignon, 50% Syrah, 5% Petit Verdot
Bottling: May 5th, 2004
Production: 1000 x 6 wood cases

Tasting Notes:
Stephan's archetypal "Paso blend" is deep,
almost black at its center, with a rich purple cast. Elegant aromas of cassis
and pain grille are only a prelude to a complex crescendo of tobacco, dark
fruit, and spice flavors that linger long on the classic, tight palate. Enormous
tannins integrate perfectly into the flesh of the wine. This wine is the future
of L'Aventure.
